I thought I would change up my posts a little bit and do a recipe! After all, moms gotta cook every now and then.
I’m not biased but my Mom makes the best banana bread. Ok, I’m biased. The best day of my life was when she would ask me to come help her bake it. She got the recipe out of Aunt Bee’s Cookbook, originally called Gomer Pile’s Banana Bread. Think Andy Griffith Show, do you know what that is? Lord, I hope so! Not only is it super delicious but it is so easy to make.
Whenever I have bananas and the last one or two get a little too ripe to eat, I chuck them in the freezer. Whenever I have enough, 6 or 7, I do a happy dance and break out the butter and sugar. If you do not have bananas in your freezer and still want to make this yummy bread then grab a bunch from the grocery store and put them in the oven on 350 degrees until they are nice and brown.
My favorite way is to eat some for breakfast, warmed in the microwave for a few seconds and slathered with butter. Enjoy!
Edited: I’ve never added nuts or chocolate chips but I’m sure they would make yummy additions!
Momma’s Banana Bread
- 1 cup butter, softened
- 2 cups sugar
- 4 eggs, well beaten
- 6-7 ripe bananas, mashed
- 2 1/2 cups flour, sifted
- 1 tsp salt
- 2 tsp baking soda
- Preheat oven to 350 degrees. Grease 2 large load pans or 5 small ones
- Cream butter and sugar. Mix in eggs, and then bananas
- In separate bowl, sift dry ingredients
- Fold into batter, mixing well. But do not over mix or bread will be crumbly
- Pour into pans, bake for 50-60 minutes until bounces back at touch
